Take a bowl and add egg yolk, lemon juice, white wine vinegar and mustard and salt combine. Then whisk these ingredients together until blended 30 seconds. It will become bright yellow. By using the teaspoon, measure 1/4 teaspoon oil and whisk it constantly. After that, again add 1/4 oil to yolk mixture a few drop at a time about 4 minutes and whisk constantly. At last, add all remaining 1/2 cup oil in a very slow thin stream and continue whisking until Mayonnaise becomes thick about 8 minutes. Mayonnaise should be lighter in colour. Pour it out into a bowl or bottle and cover and chill in the refrigerator.  We can do variations on it. We can do variations in Mayonnaise. We can add minced garlic and ginger for taste to the yolk mixture. Instead of canola oil, we can use extra virgin olive oil.
